Founded in 2018, LIFe – Laboratorio Italiano Fermentati is the pioneering Italian company which develops, produces and distributes spontaneously fermented organic plant foods.
So-called “traditional” or “spontaneous” fermentation uses microorganisms naturally present in the matrix. To guide the formation of the microbiota of spontaneously fermented food, LIFe experts create a selective environment within which they can control environmental variables. This approach is based on the study of natural processes and exploits the potential of plant ingredients, creating functional metabolites, enriching foods with microorganisms, and developing unique flavours. LIFe, a certified organic company that devotes great attention to the choice of raw materials, aims to work in harmony with microorganisms by promoting a symbiotic interaction between Man and the environment, in which fermented foods represent the bridge between natural and human ecosystems.
